FRENCH ONION SOUP CASSEROLE
2-3 Tbs butter or margarine
3 large sweet onions or 4 medium white or yellow onions
2 c. shredded Swiss cheese (8 oz.)
1 can cream of chicken soup, undiluted**
2/3 c. milk
1 tsp. soy sauce (Low sodium)
8 or so slices of French bread
**You can substitute cream of mushroom soup for cream of chicken to make vegetarian.
Preheat oven to 350.
Slice onions and try not to cry. With this many onions, its hard. If you have a food processor with a slicing wheel, it's worth getting it out.
Melt butter in a large saute pan over medium heat, and add onions. Saute onions until clear, a little brown is ok. In a shallow 2 qt. casserole pan, layer onions, 2/3 of cheese and pepper to taste.
In a large sauce pan, heat soup, milk, and soy sauce, stirring to blend. Pour soup mixture in a casserole and stir gently to mix. Top with bread slices - JUST lay them on top, do not yet push them down in.
Bake at 350 uncovered for 15 minutes. After 15 minutes, top of bread should be nice and toasted.
Push bread slices under the sauce and top with the remaining cheese
Place casserole back in oven and finish baking for 15 more minutes.
Total prep time: 20 minutes.
Total baking time: 30 minutes.

3 Roma Tomatoes
2 Cloves Garlic
1 Jalapeno Pepper
1/2 Lime, Juiced
1/4 Cup Cilantro
Salt to taste
1. Most of a pepper's heat comes from the seeds and veins, so seed and devein the pepper.
2. Add pepper to food processor. Process to desired consistency.
3. Remove the pepper from the food processor using a spatula.
4. Add the garlic, lime juice, cilantro to to the food processor. Process to desired consistency.
5. Add the tomatoes to the food processor. Process to desired consistency.
6. Slowly add the chopped pepper to the salsa until you reach desired heat. Not hot enough? Add the seeds.
Tips:
Tomatoes will become a liquidy mess in a food processor. That's why I add them last.
For better tasting salsa, roast your vegetables. Throw them on the grill or under a broiler until they begin to blacken. The tomatoes will blister and begin to peel. I peel my tomatoes after I roast them. The skins should come right off.
Some people like onion in their salsa. If you do, add 1/2 an onion.

1 tablespoon butter
Preheat oven to 400 degrees F (220 degrees C).
Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over blueberries.
Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining
pastry into 1/2 - 3/4 inch wide strips, and make lattice top. Crimp and flute edges.
Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown. (you may wish to cover
the edges)
TASTE your berries first...if they are tart you may wish to add a little more sugar...if they are sweet, you can
decrease the sugar a little.

Best Carrot Cake I ever made..
2 cups all-purpose flour
1 1/2 cups white sugar
2 teaspoons baking soda
1 teaspoon salt
1/2 cup unsweetened cocoa powder
1/2 teaspoon nutmeg
1 teaspoon cinnamon
4 eggs
1 teaspoon vanilla extract
3/4 cups vegetable oil
3/4 cups applesauce
2 cups grated carrots
1 cup crushed pineapple with juice
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9 inch round cake pans.
In a medium bowl, stir together the flour, sugar, baking soda, salt and cocoa and spices., set aside. In another bowl, stir together the eggs, vanilla, applesauce and oil. Stir in the dry ingredients until they are completely absorbed. Fold in the carrots and pineapple. Pour the batter evenly between the three prepared pans.
Bake for 30-35 minutes in the preheated oven, until a toothpick inserted comes out clean. Frost cake when cool. Cream cheese frosting works best.

So I've started to teach myself how to cook. I've so far learned how to bake bread from scratch, how to make a proper shepherds' pie, and today I learned how to make apple baklava. And that last recipe is so scrumptious, I wanted to share it with you. So here you go.
Apple baklava
You need:
2. Roast the pistachos and crush them or chop them up
3. Slice, dice, peel the apples and put them on the stove on high heat with brown sugar and 100 gr. butter to make somewhat of a jam. 8 minutes of simmering on high is enough.
4. Start layering the filo dough. Every layer is topped off with melted butter and a tablespoon of brown sugar. Layer 2.
5. Between the second and third layer of filo dough lay half of the chopped up pistachos.
6. Atop of the third layer and fourth layer, again butter and sugar.
7. On the fifth layer you put all of the apple jam you made earlier. Spread out evenly.
8. Continue to layering the filo dough topping them off with melted butter and brown sugar like before until you've used 10 leafs in total.
9. Top off the entire thing with the leftover pistachos and spread out evenly.
10. Put the entire thing in the oven and bake for 40 minutes. If the dough bronzes too quickly fold a sheat of aluminum foil over it.
11. Whilst it's baking, take the half a liter of applejuice and put on the stove on high. Let it boil in until it's around 100cl left. Then take off the stove and add a few tablespoons of runny honey.
12. When the baklava comes out of the oven splash the applejuice and honey over it..
Eat when warm... Enjoy..
