When I tried to log in, using build 1549, it told me there was a version conflict. So I clicked update in the client and was updated to build 1588. But it seems the server is on build 1587. Is there any way to roll back to that build? If not, when will the server be on 1588?

It looks like a small fix was just released earlier today for build 1587 (to-> 1588), which is what the server is on.
The server will need to be patched again.

Same thing happened to me - I restored NWN2 directory from a backup (just the program files one) and used the links in this thread to selectively patch to 1587, and all was good.

I patched my game thinking the server was updated to the new version and guess what! My game got corrupted and my DVD-ROM drive doesn't work! Awesome, it's going to take about a week to download an ISO.......
